Un-insured driver totaled my car!!?? Any tips when dealing with insurance?

I have full coverage, My uninsured motorist coverage is $50,000. I was hit last summer and totaled my car. I had to go to hospital.. MRI...X-RAY'S... therapy.. yada yada... I am doing better now and am putting together my demand letter. Any tips on dealing with insurance? So far they have been good, paid 5,000 towards medical already.. and paid off car.. yada yada.. I am nervous because since i have to sue my OWN policy.. i am afraid they are not going to give me a good settlement... cause of course they want to keep their money.. right?... what to do?
